Lentil Stew with Sausages: A Classic of Home Cooking
A hearty recipe for the whole family – quick to prepare and full of flavor.
Ingredients (for 4 servings):
- 250 g plate lentils
- 2 carrots
- 2 potatoes
- 1 onion
- 1 leek
- 1 piece of celery (approx. 100 g)
- 1 tbsp butter or oil
- 1.5 liters vegetable broth
- 2 bay leaves
- 2 tbsp vinegar
- Salt, pepper, a pinch of sugar
- 4 sausages (e.g., Wiener or Bockwurst)
- 1 tsp mustard (optional)
- Parsley for garnish

Here's how it's done:
- Rinse the lentils in a sieve.
- Peel or clean the vegetables and cut them into small cubes or rings.
- Heat butter or oil in a large pot, sauté the onion until translucent, then briefly sauté the carrots, leek, celery, and potatoes.
- Add the lentils, pour in the vegetable broth, add the bay leaves, and let simmer for about 30 minutes until the lentils and vegetables are tender.
- Season with vinegar, salt, pepper, and a pinch of sugar. Stir in mustard if desired.
- Slice the sausages, add them to the stew, and warm briefly.
