Lentil Stew with Sausages: A Classic of Home Cooking

A hearty recipe for the whole family – quick to prepare and full of flavor.

Ingredients (for 4 servings):

  • 250 g plate lentils
  • 2 carrots
  • 2 potatoes
  • 1 onion
  • 1 leek
  • 1 piece of celery (approx. 100 g)
  • 1 tbsp butter or oil
  • 1.5 liters vegetable broth
  • 2 bay leaves
  • 2 tbsp vinegar
  • Salt, pepper, a pinch of sugar
  • 4 sausages (e.g., Wiener or Bockwurst)
  • 1 tsp mustard (optional)
  • Parsley for garnish

Here's how it's done:

  1. Rinse the lentils in a sieve.
  2. Peel or clean the vegetables and cut them into small cubes or rings.
  3. Heat butter or oil in a large pot, sauté the onion until translucent, then briefly sauté the carrots, leek, celery, and potatoes.
  4. Add the lentils, pour in the vegetable broth, add the bay leaves, and let simmer for about 30 minutes until the lentils and vegetables are tender.
  5. Season with vinegar, salt, pepper, and a pinch of sugar. Stir in mustard if desired.
  6. Slice the sausages, add them to the stew, and warm briefly.
