Chicken Curry with Rice: Aromatic Curry Made Easy
Quick to prepare and full of exotic flavors – the perfect curry for any day.
You will need the following ingredients:
- 200 g chicken breast fillet
- 125 g basmati rice
- 1 small onion
- 1 clove of garlic
- 1 small piece of ginger (approx. 1 cm)
- 1/2 red bell pepper
- 1/2 zucchini
- 1 tbsp oil
- 1 tbsp curry powder
- 1/2 tsp turmeric
- 200 ml coconut milk
- 100 ml vegetable broth
- Salt, pepper
- 1/2 tbsp soy sauce
- Fresh coriander (optional)

Here's how it's done:
- Cook the rice: Cook the basmati rice in lightly salted water according to the package instructions.
- Prepare the chicken: Cut the chicken breast into bite-sized pieces and season with salt and pepper.
- Chop the vegetables: Finely chop the onion, garlic, and ginger. Dice the bell pepper and zucchini.
- Sear the chicken: Heat oil in a pan and sear the chicken pieces until golden brown. Remove and set aside.
- Sauté the vegetables: In the same oil, sauté the onion, garlic, and ginger. Add the bell pepper and zucchini and cook briefly.
- Season: Add curry powder and turmeric, and toast briefly until fragrant.
- Make the sauce: Pour in the coconut milk and vegetable broth, stir, and bring to a boil.
- Add the chicken: Return the seared chicken to the sauce and let it simmer for about 10 minutes until fully cooked.
Season to taste: Adjust the flavor with soy sauce, salt, and pepper.
Serve: Serve the curry with rice and optionally garnish with fresh coriander.
