Chicken Curry with Rice: Aromatic Curry Made Easy

Quick to prepare and full of exotic flavors – the perfect curry for any day.

You will need the following ingredients:

  • 200 g chicken breast fillet
  • 125 g basmati rice
  • 1 small onion
  • 1 clove of garlic
  • 1 small piece of ginger (approx. 1 cm)
  • 1/2 red bell pepper
  • 1/2 zucchini
  • 1 tbsp oil
  • 1 tbsp curry powder
  • 1/2 tsp turmeric
  • 200 ml coconut milk
  • 100 ml vegetable broth
  • Salt, pepper
  • 1/2 tbsp soy sauce
  • Fresh coriander (optional)

Here's how it's done:

  1. Cook the rice: Cook the basmati rice in lightly salted water according to the package instructions.
  2. Prepare the chicken: Cut the chicken breast into bite-sized pieces and season with salt and pepper.
  3. Chop the vegetables: Finely chop the onion, garlic, and ginger. Dice the bell pepper and zucchini.
  4. Sear the chicken: Heat oil in a pan and sear the chicken pieces until golden brown. Remove and set aside.
  5. Sauté the vegetables: In the same oil, sauté the onion, garlic, and ginger. Add the bell pepper and zucchini and cook briefly.
  6. Season: Add curry powder and turmeric, and toast briefly until fragrant.
  7. Make the sauce: Pour in the coconut milk and vegetable broth, stir, and bring to a boil.
  8. Add the chicken: Return the seared chicken to the sauce and let it simmer for about 10 minutes until fully cooked.

Season to taste: Adjust the flavor with soy sauce, salt, and pepper.

Serve: Serve the curry with rice and optionally garnish with fresh coriander.
