Fried asparagus with yoghurt dip: Crispy delight for spring

Green asparagus with a twist – crispy on the outside, tender on the inside, served with a refreshing yoghurt dip.

Here are the ingredients you need:

  • 500 g green asparagus
  • 100 g flour
  • 2 eggs
  • 100 g breadcrumbs (optionally mixed with Parmesan)
  • Salt, pepper
  • Oil for frying

For the yoghurt dip:

  • 200 g Greek yoghurt
  • 1 garlic clove, finely chopped
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt, pepper
  • Fresh herbs (e.g., dill, parsley, or chives), finely chopped

Here's how it works:

  1. Wash the asparagus and trim off the woody ends.
  2. Place flour, beaten eggs, and breadcrumbs in separate bowls.
  3. Season the asparagus with salt and pepper, then coat in flour, dip in eggs, and finally roll in breadcrumbs.
  4. Heat oil in a pot or pan to about 170°C and fry the asparagus in batches until golden brown. Drain on kitchen paper.
  5. For the dip, mix the yoghurt with garlic, lemon juice, olive oil, salt, pepper, and herbs.
  6. Serve the asparagus hot with the yoghurt dip.
