Fried asparagus with yoghurt dip: Crispy delight for spring
Green asparagus with a twist – crispy on the outside, tender on the inside, served with a refreshing yoghurt dip.
Here are the ingredients you need:
- 500 g green asparagus
- 100 g flour
- 2 eggs
- 100 g breadcrumbs (optionally mixed with Parmesan)
- Salt, pepper
- Oil for frying
For the yoghurt dip:
- 200 g Greek yoghurt
- 1 garlic clove, finely chopped
- 1 tbsp lemon juice
- 1 tbsp olive oil
- Salt, pepper
- Fresh herbs (e.g., dill, parsley, or chives), finely chopped

Here's how it works:
- Wash the asparagus and trim off the woody ends.
- Place flour, beaten eggs, and breadcrumbs in separate bowls.
- Season the asparagus with salt and pepper, then coat in flour, dip in eggs, and finally roll in breadcrumbs.
- Heat oil in a pot or pan to about 170°C and fry the asparagus in batches until golden brown. Drain on kitchen paper.
- For the dip, mix the yoghurt with garlic, lemon juice, olive oil, salt, pepper, and herbs.
- Serve the asparagus hot with the yoghurt dip.
