Potato pancake with apple sauce
The processing possibilities of the potato are versatile. How about, a delicious potato pancake with apple sauce as a side dish?
For the recipe you need:
- 1kg apples
- 2 tbsp sugar
- 1.2kg floury potatoes
- 2 tbsp natural yoghurt
- 1 onion
- 1 egg
- 1 tbsp potato flour
- salt
- pepper
- freshly grated nutmeg
- 4 tsp oil
Preparation:
- Wash, quarter, peel and core the apples. Put into a saucepan, add 100ml water, cover and cook for 10 minutes until soft. Mash the apples with a potato masher. Transfer the purée with a ladle to a bowl and stir in the sugar.
- Peel and finely grate the potatoes. Transfer to a sieve and squeeze out the liquid, catching it in a bowl. Put the grated potato onto a cloth and wring out well over the bowl, catching the liquid. The starch will settle in the bottom of the bowl. Discard the liquid. Mix the potatoes with the starch in the bowl, stir in the yoghurt. Peel and finely chop the onion, then stir it into the potato mixture together with the egg and the potato flour. Season with salt, pepper and nutmeg. Shape the mixture into flat potato pancakes.
- Heat a little oil in a large frying pan and fry the pancakes in batches for about 3 minutes on each side until golden brown. Serve the pancakes with the apple sauce.
